Join the South Carolina Aquarium’s Sustainable Seafood Initiative and the Factory Creek Fish Company, a sustainable restaurant partner in Beaufort, for a delicious dinner featuring sustainable seafood. Menu will feature: First, local fried oysters, paired with a Zaphy Torrontes-Argentina; second, spiced lemon-basil shrimp, paired with a Wente Sauvignon Blanc-Livermore; third, pan seared sea scallops with roasted corn puree, red pepper cream, and yellow pea shoots, paired with a Pacific Rim Organic Riesling-Washington State; fourth, Sapelo clams with white wine, garlic and chive oil, paired with a Rodney Strong Chardonnay-Sonoma; fifth, grilled triggerfish, asparagus, & truffle fried shallots, paired with a Parducci Sustainable Red-Mendicino; and lastly for dessert , a pecan cheesecake. Ten percent of the proceeds from the dinner will benefit the South Carolina Aquarium’s Sustainable Seafood Initiative, a conservation program of the non-profit organization. Tickets are $50 a person (plus tax and gratuity).
